Processed meat is meat that has been preserved by smoking, curing, salting or by adding the preservatives nitrites and nitrates. This includes ham, bacon, salami, frankfurts, prosciutto and some sausages such as cabanossi and kransky.
There’s convincing evidence that eating processed meat causes bowel cancer and probably increases your risk of stomach cancer.
About 2,600 cases of bowel cancer could be attributed to eating red and processed meat.
The risk of developing bowel cancer goes up 1.18 times for every 50 grams of processed meat eaten per day.
